



 I was a good girl last year, and Santa came through big time with the pasta roller attached for my Kitchen Aide Mixer. After reading Eat, Pray, Love by Elizabeth Gilbert, I needed fresh pasta in a bad way. This was so much fun to do. The kids helped in making a big mess. 
Ah, it all worth it. Next time I will mix the 5 eggs and 3 cups of flour in the mixer and not on the board...too messy. I was suppose to knead the dough for 10 minutes, but I used my dough hook attachment instead.
For the filling I combined the following:
a cup of 
ricotta cheese
sauteed chard (6 leaves)
6 cloves of garlic
1/3 cup pine nuts
I dredged the 
raviolis in semolina flour,then wrapped them in plastic wrap and refrigerated.
I layered the 
ravioli on top of 
each other, and they stuck together...next time I will not let them touch. I cooked them in boiling water till they floated on top. Then, served with grated 
Romano. So rich and 
delicious.

I am seriously impressed that you can make homemade pasta. Homemade ravioli shoots you into an entirely new category in my book. Love all of the glitter! Great blog....keep it up.
